Leaf lard makes more delicate lard (vs back fat) to be used for pastries. (This is unrendered fat that will need to still be rendered into lard.)
Our Berkshire hogs are raised on pasture and supplemented with dairy products, hay, and occasionally some Non-GMO corn. Never fed any soy and no GMO’s ever!
