Picanah steak/Coulotte steak/Top Sirloin Cap $16/lb
This steak is something we have recently specifically started requesting from our butcher because we’ve heard such great things about it. It was a little new to them, so the cut was slighly different from cow to cow on the first few cows we had them do. Some have a nice fat cap on them, and others do not. So I’ve tried to label the differences between the individual steaks in the drop down bar. I’ve included pictures of 3 different steaks to try to illustrate the differences.
“Picanha” (pronounced pee-KAHN-yah) is a popular cut of beef in South American cuisine, particularly in countries like Brazil. It is also known as “coulotte” or “top sirloin cap” in some parts of the world. Picanha comes from the top of the sirloin section of the cow, and it is prized for its flavor, tenderness, and marbling. Considered the most delectable cut for Brazilian steakhouses around the world, it’s perfect for cooking on the grill or in the oven. When cooked to the ideal medium rare, it’s incredibly tender, juicy and loaded with rich beef flavor.
When cooked as a steak, picanha typically features a thick cap of fat on one side, which helps enhance its juiciness and flavor during cooking. The fat cap becomes crispy when seared, providing a rich contrast to the tender meat underneath. The meat itself has a good balance of lean muscle and marbled fat, contributing to its succulent and savory taste.
Picanha is often prepared using simple seasonings, such as coarse salt and sometimes garlic, to let the natural beef flavor shine. It’s commonly grilled or roasted, and the recommended cooking method is to start with high heat to sear the fat side, locking in the juices, and then finish with slightly lower heat to cook the meat to the desired doneness. The steak is typically served sliced against the grain, which helps ensure tenderness.
The result is a flavorful and juicy steak with a delicious contrast between the crispy, well-seasoned fat cap and the tender, beefy meat. Picanha is often enjoyed with side dishes like chimichurri sauce, rice, beans, and various vegetables.
